
Spinach Garlic Meatballs Stuffed with Mozzarella
Directions:
Preheat oven to 400°F (200°C).
In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, egg, breadcrumbs, parmesan, salt, pepper, and red pepper flakes. Mix thoroughly until all ingredients are well combined.
Form the mixture into small meatballs, approximately 1 1/2 inches in diameter.
Insert a small piece of mozzarella cheese into the center of each meatball and roll to enclose the cheese completely.
Heat olive oil in a large oven-safe skillet over medium heat. Add the meatballs and cook for 2-3 minutes, turning frequently until browned on all sides.
Transfer the skillet to the preheated oven and bake the meatballs for 12-15 minutes, or until they are cooked through.
Serve hot, and enjoy the gooey mozzarella surprise in each bite!
