Spinach and Feta Egg Muffins

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with olive oil spray.
  2. In a large bowl, whisk the eggs and milk together. Season with salt and pepper.
  3. Divide the chopped spinach evenly among the muffin tin cups.
  4. Pour the egg mixture over the spinach and top with crumbled feta cheese.
  5. Bake for 15–20 minutes or until the eggs are set and slightly golden on top.
  6. Let the muffins cool slightly before removing them from the tin.
