Homemade Traditional Filipino Bibingka

Directions:
Preheat your oven to 375°F (190°C). If using banana leaves, lightly grease them and line your baking pan.
In a large bowl, combine rice flour, all-purpose flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and mix in coconut milk and water.
Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
Pour the batter into the prepared pan. Sprinkle grated coconut on top.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool slightly before serving. Enjoy your homemade Bibingka warm!
