Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.
- Mix crumbs + butter, press a spoonful into each liner (the crust).
- Beat cream cheese + sugar until smooth. Add eggs one at a time, then vanilla.
- Pour batter over crusts, filling each ¾ full.
- Bake 18–20 min until just set. Cool completely, then chill in fridge at least 2 hours.
