Easy Shepherd’s Pie Casserole
Comforting Shepherd’s Pie with a Savory Twist
Ingredients:
1 lb ground beef or lamb
1 onion, chopped
2 cloves garlic, minced
2 cups mixed vegetables (carrots, peas, corn)
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
4 cups mashed potatoes (store-bought or homemade)
1 cup shredded cheddar cheese (optional)
Fresh parsley for garnish
Directions:
Preheat oven to 400°F (200°C).
In a large skillet over medium heat, brown the ground beef or lamb until fully cooked. Drain excess fat if necessary.
Add the chopped onion and minced garlic to the skillet, cooking for 3-4 minutes until the onion is translucent.
Stir in the mixed vegetables, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
Transfer the meat and vegetable mixture to a greased 9×13 inch baking dish, spreading it evenly.
Top the meat mixture with the mashed potatoes, smoothing them out with a spatula. If desired, sprinkle shredded cheddar cheese on top.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the edges are bubbling.
Remove from the oven and let cool for a few minutes before garnishing with fresh parsley.
