- Activate yeast
Mix warm water, yeast, and honey. Rest 5–10 minutes until foamy. - Mix dry ingredients
In a large bowl, combine flours, oats, all seeds, and salt. - Combine
Add yeast mixture and olive oil to the dry ingredients. Stir with a spoon until a thick, sticky dough forms. - First rise
Cover and let rise in a warm place for 1 hour, until doubled. - Prepare pan
Grease a loaf pan. Transfer dough into the pan and smooth the top with wet hands. Sprinkle seeds on top. - Second rise
Let rise again for 30 minutes. - Bake
Bake at 180°C (350°F) for 45–50 minutes, until golden brown and firm. - Cool
Remove from pan and cool completely before slicing (important for clean slices).
