Cookies Made From Brownie Mix

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking. In a large bowl, combine the brownie mix, eggs, and vegetable oil.

Stir vigorously until a thick, cohesive dough forms; it should be thicker than traditional brownie batter and resemble a standard cookie dough. At this point, gently fold in your chosen mix-ins like chocolate chips.

Using a cookie scoop or a tablespoon, drop rounded portions of dough onto the prepared baking sheet, leaving about 2 inches between each to allow for spreading. Bake for 8 to 10 minutes.

The cookies are done when the edges look set and may be slightly cracked, but the centers still appear soft and underbaked. Avoid overbaking for that signature chewy center.

Let the cookies cool directly on the baking sheet for 5 minutes to firm up, then carefully transfer them to a wire rack to cool completely before serving.
