Make the mixture
In a large bowl, mix together peanut butter, melted butter, and powdered sugar until smooth.
Add cereal
Gently fold in the Rice Krispies until evenly coated.
Shape the balls
Scoop about 1 tablespoon of mixture and roll into balls.
Place on a parchment-lined baking sheet.
Chill
Refrigerate for 20–30 minutes until firm.
Melt chocolate
In a microwave-safe bowl, melt chocolate chips (and coconut oil if using) in 30-second intervals, stirring until smooth.
Coat the balls
Dip each chilled ball into melted chocolate, letting excess drip off.
Return to parchment paper.
Decorate
Add sprinkles or candy cane pieces before the chocolate sets.
Set & serve
Refrigerate for 15 minutes or until chocolate is firm.
Storage
Store in an airtight container in the fridge for up to 1 week
Can be frozen for up to 2 months
