Chocolate & Peanut Butter Dream Roll

Directions
Preheat oven:
– Set oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment and lightly grease.
Make the cake:
– In a large bowl, beat eggs for 5 minutes until thick. Gradually add sugar, then vanilla.
– In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gently fold dry ingredients into egg mixture until smooth.
Bake:
– Spread batter evenly in prepared pan. Bake for 12–14 minutes, or until cake springs back when touched.
Roll the cake:
– While still hot, dust a clean towel with powdered sugar. Invert the cake onto the towel, peel off parchment, and gently roll it up with the towel. Let cool completely.
Make the filling:
– Beat together peanut butter, cream cheese, and powdered sugar until smooth. Fold in whipped topping.
Assemble:
– Unroll the cooled cake, spread filling evenly, then re-roll without the towel. Transfer to serving platter.
Decorate:
– Drizzle with melted chocolate and top with crushed peanuts or chocolate shavings, if desired
